Crisp Apple and Roasted Pumpkin Salad with Honey Dijon Vinaigrette



Ingredients



- Main Components:
- 2 cups roasted pumpkin cubes
- 4 cups leafy greens (arugula, spinach, or mixed greens)
- 1 large crisp apple, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cup dried cranberries

- 1/2 red onion, thinly sliced

- Vinaigrette Dressing:
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt, to taste
- Pepper, to taste

Instructions



1. Roast the Pumpkin:
- Preheat your oven to 400°F (200°C).
- Peel and cube the pumpkin into 1-inch pieces.
- Toss the pumpkin cubes with a drizzle of olive oil, salt, and pepper.
- Spread evenly on a baking sheet and roast in the oven for PT30M (30 minutes) until tender and slightly caramelized. Allow to cool slightly.

2. Prepare the Vinaigrette:
- In a small bowl, whisk together the extra virgin olive oil, lemon juice, apple cider vinegar, Dijon mustard, honey, and minced garlic until well emulsified.
- Season the dressing with salt and pepper to taste. Set aside.

3. Assemble the Salad:
- In a large salad bowl, combine the leafy greens, sliced apple, red onion, and roasted pumpkin cubes.
- Add the crumbled feta cheese, dried cranberries, and roasted walnuts or pecans.
- Drizzle the prepared honey Dijon vinaigrette over the salad.

4. Toss and Serve:
