Crispy Corned Beef Breakfast Hash with Potatoes and Cabbage
Ingredients
- 1 pound corned beef, cubed
- 2 medium red potatoes, diced
- 2 medium Yukon Gold potatoes, diced
- 1/2 head green cabbage, thinly sliced
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 3 tablespoons butter
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
1. Preparation: Begin by washing and dicing the potatoes (both red and Yukon Gold) into small cubes. Slice the cabbage into thin strips, chop the onion finely, and mince the garlic cloves.
2. Parboil the Potatoes: Place the diced red and Yukon Gold potatoes in a medium saucepan, cover with water, and bring to a boil. Cook for about 5 minutes until slightly tender but not fully cooked. Drain and set aside.
3. Heat the Skillet: In a large skillet or cast-iron pan over medium heat, melt the butter. Let it coat the bottom of the pan completely.
4. Sauté the Aromatics: Add the chopped onion to the pan and cook for about 3 minutes until translucent. Stir in the minced garlic and sauté for another 1 minute until fragrant.
5. Cook the Corned Beef and Cabbage: Add the cubed corned beef to the skillet and cook, stirring occasionally, for about 5 minutes until the edges begin to crisp. Toss in the sliced cabbage and continue cooking for another 5 minutes until the cabbage is tender.
6. Crisp the Potatoes: Increase the skillet heat to medium-high. Add the parboiled potatoes to the pan, spreading them out in a single layer. Allow them to cook, without stirring, for about 4-5 minutes to develop a crispy exterior. Flip and cook for another 4-5 minutes until golden brown on all sides.
7. Combine and Season: Mix the potatoes with the corned beef and cabbage mixture. Season with salt and pepper to taste. Toss everything together and cook for an additional 2-3 minutes to ensure everything is heated through.
8. Serve: Remove from heat and garnish with freshly chopped parsley. Serve immediately for a delicious and hearty breakfast.
