Crispy Deep-Fried Cinnamon Sugar Churros
Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1 tablespoon granulated sugar
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
- Vegetable oil, for frying
Instructions
1. Prepare the Dough
Place 1 cup of water, 1/2 cup unsalted butter, and 1 tablespoon granulated sugar in a medium saucepan. Heat over medium heat until the butter is melted and the mixture begins to simmer.
2. Incorporate the Flour
Reduce the heat to low. Add 1 cup of all-purpose flour all at once, stirring vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan, about 2-3 minutes.
3. Cool and Add Eggs
Remove the pan from heat and let the mixture cool for about 5 minutes. Add the eggs one at a time, fully incorporating each before adding the next. Stir in the vanilla extract until the dough becomes smooth and glossy.
4. Heat the Oil
Fill a deep skillet or heavy-bottomed pot with about 2 inches of vegetable oil. Heat the oil to 375°F (190°C).
5. Pipe the Churros
Spoon the dough into a pastry bag fitted with a large star tip. Carefully pipe 6-inch strips of dough into the hot oil, using a pair of scissors to cut off the dough at the tip.
6. Fry Until Golden
Fry the churros in batches, turning occasionally, until they are golden brown and cooked through, about 4-5 minutes per batch. Use a slotted spoon to transfer the churros to a paper towel-lined plate to drain.
7. Coat with Cinnamon Sugar
In a shallow dish, combine 1/2 cup granulated sugar with 1 tablespoon ground cinnamon. Roll the warm churros in the cinnamon sugar mixture until well-coated.
