Crispy Fish Tacos with Zesty Lime Cabbage Slaw

Ingredients

For the Fish:
- 4 white fish fillets (such as cod, tilapia, or halibut)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil (for deep frying)

For the Slaw & Assembly:
- 8 small corn tortillas
- 2 cups finely shredded cabbage
- 1 lime, juiced
- 1/2 cup sour cream
- 1 tablespoon hot sauce (adjust to taste)
- Salt to taste

Instructions

1. Prepare the Slaw:
- In a medium bowl, combine the shredded cabbage with lime juice and a pinch of salt. Toss to coat evenly. Set aside to marinate while you prepare the fish.

2. Prepare the Breading Station:
- Place the flour in a shallow dish and season with salt and black pepper.
- Beat the eggs in another shallow dish until the yolks and whites are blended.
- Place the breadcrumbs in a third shallow dish.

3. Bread the Fish:
- Pat the fish fillets dry with paper towels. Lightly season them with salt and pepper.
- Dredge each fillet in the flour, shaking off excess.
- Dip the flour-coated fish into the eggs, ensuring it's completely coated.
- Press the fish into the breadcrumbs, ensuring they adhere evenly. Repeat with all fillets.

4. Deep Fry the Fish:
- In a deep fryer or a heavy-bottomed pot, heat vegetable oil to 350°F (175°C).
- Carefully lower the breaded fish fillets into the hot oil. Fry for 4-5 minutes, or until golden brown and cooked through, flipping halfway through cooking.
- Remove the fish from the oil and drain on a paper towel-lined plate.

5. Warm the Tortillas:
- In a dry skillet over medium heat, warm the tortillas one at a time for about 30 seconds on each side until they’re pliable and warm.

6. Assemble the Tacos:
- In a small bowl, mix the sour cream and hot sauce to create a zesty sauce.
- Place a crispy fish fillet onto each warmed tortilla.
- Top with a handful of lime cabbage slaw.
- Drizzle with the sour cream and hot sauce mixture.

7. Serve Immediately:
- Serve the tacos hot with additional lime wedges and hot sauce on the side.
