Crispy Herb-Infused Duck Fat Potatoes
Ingredients
- 4 large russet potatoes, peeled and diced into 1-inch cubes
- 3 tablespoons duck fat
- 2 tablespoons butter
- 1 tablespoon canola oil
- 1 tablespoon avocado oil
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
Instructions
1. Preheat the Oven:
- Preheat your oven to 425°F (220°C).
2. Prepare the Potatoes:
- Place the diced potatoes in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.
- Bring to a boil over high heat and cook for 5 minutes until the potatoes are just starting to soften.
- Drain the potatoes and let them sit for a minute to dry.
3. Infuse with Duck Fat:
- In a large mixing bowl, combine the duck fat, butter, canola oil, and avocado oil.
- Add the boiled potatoes to the bowl and gently toss them to coat evenly.
4. Season and Flavor:
- Add minced garlic, rosemary, thyme, remaining salt, and black pepper to the potato mixture. Toss until the potatoes are well-seasoned.
5. Roast in the Oven:
- Spread the potatoes out in a single layer on a large baking sheet.
- Roast in the preheated oven for 35-40 minutes, turning them halfway through, until they are golden brown and crispy on the outside.
6. Finish with Fresh Herbs:
- Once cooked, remove the potatoes from the oven and immediately sprinkle with fresh parsley.
7. Serve:
- Transfer the crispy potatoes to a serving platter and serve hot.
