Crispy Olive Oil Garlic Herb Chips
Ingredients
- 4 medium-sized Russet potatoes, peeled and thinly sliced
- 1/3 cup olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon sea salt
- 1 teaspoon black pepper
Instructions
1. Prepare the Potatoes:
- Using a mandoline slicer or a sharp knife, peel and thinly slice the potatoes to about 1/8 inch thick.
- Pat the potato slices dry with paper towels to remove excess moisture.
2. Infuse the Olive Oil:
- In a large skillet, heat the olive oil over medium-low heat for about 2 minutes.
- Add the minced garlic to the oil, stirring gently, and cook for 1-2 minutes until the garlic is golden and fragrant, not burnt.
3. Pan Fry the Chips:
- Increase the heat to medium-high and carefully add the potato slices in batches, making sure not to overcrowd the pan.
- Fry each batch for about 5 minutes, flipping halfway through, until the chips are golden brown and crispy.
4. Drain and Season:
- Use a slotted spoon to transfer the chips onto a paper towel-lined plate to absorb excess oil.
- Immediately sprinkle the chips with sea salt, black pepper, rosemary, and thyme while they are still warm.
5. Serve:
- Once all batches are cooked and seasoned, give the chips a gentle toss to mix the herbs evenly.
- Serve immediately for optimal crispiness.
