Crispy Oven-Baked Cajun Potato Wedges
Ingredients
- 4 large potatoes
- 3 tablespoons mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 teaspoons dried parsley
- 1 teaspoon paprika
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven
Preheat your oven to 425°F (220°C).
2. Prepare the Potatoes
Wash and scrub the potatoes thoroughly to remove any dirt, then pat them dry with a towel. Cut each potato into 8 evenly-sized wedges.
3. Season the Wedges
In a large mixing bowl, combine mayonnaise, garlic powder, onion powder, oregano, basil, paprika, Cajun seasoning, salt, and black pepper. Stir until well mixed.
4. Coat the Potatoes
Add the potato wedges to the seasoning mixture and toss until each wedge is thoroughly coated with the mixture.
5. Arrange on Baking Sheet
Line a baking sheet with parchment paper or lightly grease it. Spread the potato wedges in a single layer on the sheet, ensuring they are not overlapping.
6. Bake
Place the baking sheet in the preheated oven and bake for 25 minutes. Remove the tray, flip the wedges using a spatula, then return them to the oven.
7. Final Crisping
Continue baking for an additional 15-20 minutes, or until the potatoes are golden brown and crispy on the outside but tender on the inside. Total baking time should be 40-45 minutes.
8. Serve
Remove the potato wedges from the oven and serve immediately. Garnish with a sprinkle of fresh or additional dried parsley if desired.
