Crispy Oven-Baked Lumpia with Shrimp and Pork Filling
Ingredients
- 1 pound ground pork
- 1/2 cup water chestnuts, finely chopped
- 1/2 cup mushrooms, finely chopped
- 1/2 cup shrimp, peeled, deveined, and finely chopped
- 2 green onions, finely chopped
- 1/2 cup yellow onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon sugar
- 2 tablespoons soy sauce
- 1 egg, beaten
- 20 lumpia or spring roll wrappers
- Olive oil spray
Instructions
1. Preheat the oven to 400°F (200°C).
2. Prepare the filling:
- In a large mixing bowl, combine ground pork, water chestnuts, mushrooms, shrimp, green onions, yellow onions, and garlic.
- Season with salt, pepper, sugar, and add soy sauce. Mix thoroughly to ensure even seasoning.
- Add the beaten egg to the mixture and incorporate it completely to bind the filling.
3. Assemble the lumpia:
- Lay a lumpia wrapper flat on a clean surface with one corner pointed towards you, diamond shape.
- Place about 2 tablespoons of the filling near the bottom corner of the wrapper.
- Begin rolling the wrapper tightly over the filling until halfway, then fold in the sides and continue rolling.
- Dip your finger in water and moisten the top corner, pressing gently to seal the roll.
- Repeat the process until all the filling is used.
4. Bake the lumpia:
- Arrange assembled lumpia on a baking sheet lined with parchment paper, leaving a small space between each.
- Lightly spray each lumpia with olive oil spray for a crispy finish.
- Bake in the preheated oven for 20 minutes, turning halfway for even golden browning.
5. Serve:
- Allow the lumpia to cool slightly before serving. Enjoy them with your favorite dipping sauce.
