Crispy Oven-Baked Whole Wheat Sourdough Crackers
Ingredients
- 2 cups whole wheat flour
- 1 cup sourdough starter (discard)
- 1/4 cup wheat bran
- 1/2 teaspoon commercial yeast
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 cup water (as needed for consistency)
- 1 tablespoon sesame seeds (optional, for topping)
- 1 tablespoon poppy seeds (optional, for topping)

Instructions
1. Prepare the Dough:
- In a large mixing bowl, combine 2 cups of whole wheat flour, 1 cup of sourdough starter, and 1/4 cup of wheat bran.
- Add 1/2 teaspoon of commercial yeast, 1/2 teaspoon of salt, and 1/4 cup of olive oil.
- Mix the ingredients together until a rough dough forms.
- Gradually add water, 1 tablespoon at a time, if the mixture is too dry. The dough should be firm but pliable.
2. Knead the Dough:
- Transfer the dough to a lightly floured surface.
- Knead the dough for about 5-7 minutes until it's smooth and elastic.
- Form the dough into a ball and return it to the mixing bowl. Cover the bowl with a clean kitchen towel and let it rest for 30 minutes.
3. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
4. Roll Out the Dough:
- Divide the rested dough into two equal parts.
- Roll each piece of dough out onto a lightly floured surface to achieve a thickness of about 1/8 inch.
5. Cut and Top the Crackers:
- Using a sharp knife or pizza cutter, slice the rolled-out dough into small squares or rectangles.
- Transfer the cut crackers onto a parchment-lined baking sheet, leaving slight gaps between each.
- Optionally, sprinkle sesame seeds, poppy seeds, and sea salt flakes over the top of the crackers, pressing gently to adhere.
6. Bake the Crackers:
- Place the baking sheet in the preheated oven.
- Bake for 12-15 minutes or until the crackers are golden brown and crisp.
- Rotate the baking sheet halfway through the baking time for even cooking.
7. Cool and Serve:
- Remove the crackers from the oven and let them cool completely on a wire rack.
- Store in an airtight container to maintain their crispiness.
