Ingredients



- Main Ingredients:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 tablespoon vegetable oil

- Seasonings:

- 1 large onion, chopped
- 2 large carrots, peeled and sliced
- 1 cup frozen peas
- 1 cup chicken broth
- 2 tablespoons butter, divided

Instructions



1. Preheat Oven:
Preheat your oven to 400°F (200°C).

2. Prepare the Chicken:
- Pat the chicken thighs dry with paper towels to ensure crispy skin.
- In a small bowl, mix together the all-purpose flour, baking powder, salt, and black pepper.
- Rub the mixture evenly over each chicken thigh.
- Heat 1 tablespoon of vegetable oil in a large oven-safe skillet over medium-high heat.
- Place the chicken thighs skin-side down in the skillet and cook for 5 minutes until the skin is golden brown and crisp.

3. Roast the Chicken:
- Turn the chicken thighs skin-side up and sprinkle 1 tablespoon of granulated sugar evenly over the top.
- Transfer the skillet to the preheated oven and roast for an additional 25 minutes until the chicken reaches an internal temperature of 165°F and is perfectly crispy.

4. Prepare the Veggie Medley:
- While the chicken is roasting, melt 1 tablespoon of butter in a separate pan over medium heat.
- Add the chopped onion and sliced carrots, sautéing for about 5 minutes until softened.
- Stir in the frozen peas and pour in the chicken broth.
- Bring the mixture to a simmer and let cook for another 10 minutes until the vegetables are tender and the liquid reduces.

5. Finish the Veggies:
- Remove from heat and stir in the remaining tablespoon of butter, allowing it to melt and coat the vegetables.

6. Serve:
- Plate the crispy chicken thighs and spoon the buttered veggie medley alongside.
