Crispy Pan-Fried Brussels Sprouts with Greek Yogurt & Lemon Parmesan Sauce
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup Greek yogurt
- 1/4 cup freshly grated Parmesan cheese
- 1 lemon, zested and juiced
- 2 slices sourdough bread, toasted and crumbled
Instructions
1. Prepare the Brussels Sprouts: Begin by washing and trimming the Brussels sprouts. Slice them in half for more even cooking.
2. Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering.
3. Sauté the Brussels Sprouts: Place the halved Brussels sprouts in the skillet in a single layer, cut side down. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook for about 6 to 8 minutes until the cut sides are golden brown and crispy.
4. Combine Greek Yogurt Sauce: While the Brussels sprouts are cooking, prepare the yogurt sauce. In a medium bowl, combine 1 cup of Greek yogurt, 1/4 cup of grated Parmesan cheese, the zest from 1 lemon, and 2 tablespoons of lemon juice. Mix well to incorporate all ingredients.
5. Final Touches: Once the Brussels sprouts are cooked, remove them from the heat and immediately drizzle with the yogurt sauce. Toss gently to ensure the Brussels sprouts are evenly coated.
6. Serve: Transfer the coated Brussels sprouts to a serving platter. Sprinkle the crumbled sourdough toast on top for added texture and a slight crunch.
