Ingredients
- 4 slices of bread
- 2 tablespoons olive oil
- 2 medium tomatoes, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon flaky salt (for garnish)
- 4 anchovy fillets, finely chopped
- 2 tablespoons garlic aioli
- 4 slices Serrano ham
- A handful of fresh herbs (such as basil or parsley), chopped
Instructions
1. Prepare the Tomato Mixture:
- In a medium bowl, combine the chopped tomatoes, minced garlic, and kosher salt. Mix well and set aside to allow the flavors to meld.
2. Prepare the Aioli:
- In a small bowl, mix the garlic aioli with the finely chopped anchovies until well combined. Set aside.
3. Toast the Bread:
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the slices of bread and pan fry each side for 2-3 minutes until golden brown and crispy. Remove from the skillet and set aside.
4. Cook the Serrano Ham:
- In the same skillet, add the remaining olive oil.
- Add the Serrano ham slices and pan fry for about 1-2 minutes on each side until they become slightly crispy.
5. Assemble the Toast:
- Spread a generous amount of the anchovy aioli over each slice of toasted bread.
- Top with the tomato mixture, ensuring even distribution.
- Place a slice of pan-fried Serrano ham on top.
- Garnish with fresh herbs and sprinkle flaky salt over each piece.
6. Serve and Enjoy:
- Arrange the toast on a serving platter. Serve immediately to enjoy the contrast of textures and flavors.
