Crispy Pita Bites with Roasted Tomato and Labneh Spread



Ingredients


- 6 medium-sized roasted tomatoes
- 1 cup labneh
- 2 tablespoons chopped fresh dill
- 3 tablespoons tomato oil
- 2 stalks celery, finely chopped
- 4 whole wheat pita breads, cut into wedges
- 2 bell peppers (one red, one yellow), sliced into strips

Instructions


1. Prepare the Oven and Tomatoes
- Preheat your oven to 400°F (200°C).
- Slice the roasted tomatoes into thick pieces and mix them with 2 tablespoons of tomato oil, ensuring they're well-coated.

2. Roast the Vegetables
- Place the coated tomatoes, bell pepper strips, and celery on a baking sheet lined with parchment paper.
- Roast the vegetables in the preheated oven for approximately 10 minutes, or until the edges of the tomatoes and peppers start to caramelize slightly.

3. Prepare the Pita Bread
- While the vegetables are roasting, brush the pita wedges with the remaining tablespoon of tomato oil.
- Arrange the pita wedges on another baking sheet and place them in the oven alongside the vegetables for the last 5 minutes of roasting. This will make them crispy.

4. Mix the Labneh Spread
- In a medium-sized bowl, combine the labneh with the chopped dill. Gently fold in the roasted tomatoes, ensuring that they are evenly distributed. Season with a pinch of salt and pepper if desired.

5. Assemble the Snack
- Once everything is roasted to perfection, remove the vegetables and pita from the oven.
- On a serving platter, spread a generous layer of the labneh mixture on each pita wedge. Top with a strip of roasted bell pepper and a few pieces of celery for added crunch.

6. Final Touches
- Drizzle any remaining tomato oil over the assembled pita bites for an extra burst of flavor.
