Crispy Pork and Shrimp Spring Rolls with Water Chestnuts
Ingredients
- 1 pound ground pork
- 1/2 cup canned water chestnuts, finely chopped
- 1/2 cup sliced mushrooms, finely chopped
- 1/2 pound shrimp, peeled, deveined, and finely chopped
- 4 green onions, finely chopped
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon sugar
- 2 tablespoons soy sauce
- 1 egg, beaten
- 20 lumpia or spring roll wrappers
- Oil for deep frying
Instructions
1. Prepare the Filling:
- In a large mixing bowl, combine ground pork, water chestnuts, mushrooms, shrimp, green onions, yellow onion, and garlic.
- Season the mixture with salt, pepper, sugar, and soy sauce. Mix thoroughly until all ingredients are well combined.
2. Roll the Spring Rolls:
- Lay one spring roll wrapper on a clean, flat surface, with one corner pointing towards you (diamond shape).
- Place about 2 tablespoons of the filling mixture near the bottom corner of the wrapper.
- Fold the bottom corner over the filling and roll tightly halfway up the wrapper.
- Fold the left and right corners towards the center, then continue rolling.
- Brush a small amount of the beaten egg onto the top corner to seal the edge.
- Repeat with the remaining wrappers and filling.
3. Heat the Oil:
- Pour oil into a deep fryer or large pot, filling it to about 2 inches deep.
- Heat oil to 350°F (175°C), ensuring it is hot enough to achieve a golden, crispy crust.
4. Fry the Spring Rolls:
- Carefully place a few spring rolls into the hot oil, being cautious not to overcrowd the pot.
- Fry for 3-4 minutes, turning occasionally, until they are golden brown and crispy.
- Use a slotted spoon to remove the spring rolls from the oil and drain on paper towels.
- Allow them to cool slightly before serving.
