Crispy Sesame Tapioca Puffs
Ingredients
- 1 cup modified tapioca starch
- 1/2 teaspoon xanthan gum
- 2 tablespoons toasted sesame oil
- 1/4 teaspoon salt
- 1 cup water
- 4 cups vegetable oil for deep frying
Instructions
1. Prepare the Starch Mixture:
In a mixing bowl, combine 1 cup of modified tapioca starch, 1/2 teaspoon of xanthan gum, and 1/4 teaspoon of salt. Mix well to ensure the xanthan gum is evenly distributed.
2. Create a Dough:
In a small saucepan, heat 1 cup of water over medium heat until it just begins to steam. Remove from heat and slowly stir in the tapioca starch mixture, mixing constantly to avoid lumps. The mixture will begin to thicken and form a dough.
3. Add Sesame Oil:
Gradually add 2 tablespoons of toasted sesame oil to the dough, kneading with your hands once the mixture is cool enough to handle. Knead until the dough is smooth and elastic.
4. Shape the Puffs:
Break off small pieces of dough and roll into balls roughly the size of a marble. Ensure all balls are uniform for even cooking.
5. Heat the Oil:
In a deep, heavy-bottomed pot, heat 4 cups of vegetable oil to 350°F (175°C). Use a kitchen thermometer to ensure accurate temperature for deep frying.
6. Fry the Puffs:
Carefully drop the dough balls into the hot oil in small batches to avoid overcrowding. Fry each batch for about 2-3 minutes until they puff up and become golden brown. Stir occasionally for even cooking.
7. Drain and Serve:
Use a slotted spoon to remove the puffs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm for optimal crispiness.
