Crispy Stove-Simmered Pork Belly Breakfast Delight



Ingredients



- 2 pounds pork belly
- 1 tablespoon sea salt
- 1 tablespoon salt
- 2 tablespoons sugar
- 1 tablespoon mixed herbs (such as thyme and rosemary)
- 1 teaspoon spices (such as black pepper and paprika)
- 1/4 teaspoon sodium chloride
- 1/4 teaspoon sodium nitrite
- 1/4 teaspoon celery salt

Instructions



1. Prepare the Pork Belly:
Pat the pork belly dry with paper towels. Combine the sea salt, salt, sugar, herbs, spices, sodium chloride, sodium nitrite, and celery salt in a small bowl. Rub the mixture thoroughly all over the pork belly, ensuring even coverage.

2. Marinate:
Place the seasoned pork belly in a shallow dish or a sealable plastic bag. Cover or seal and let marinate in the refrigerator for at least PT8H (8 hours) or overnight. This step allows the flavors to infuse deeply into the meat.

3. Initial Stove Cooking:
Remove the pork belly from the fridge and let it come to room temperature for about PT30M (30 minutes). Heat a wide, heavy-bottomed pan over medium heat on the stove. Add the pork belly, skin side down, and cook for PT10M (10 minutes) to render some fat, creating a crispy surface.

4. Simmer the Pork Belly:
Lower the stove heat to a simmer setting. Turn the pork belly once and cover the pan with a lid. Allow the pork belly to simmer for PT1H30M (1 hour and 30 minutes), flipping occasionally to ensure even cooking.

5. Crisp Up the Skin:
Remove the lid and increase the heat to high. Flip the pork belly skin side down and let it cook for an additional PT10M (10 minutes) to achieve a deliciously crispy finish.

6. Rest and Slice:
Transfer the pork belly to a cutting board and let it rest for PT10M (10 minutes) before slicing. This will allow the juices to redistribute throughout the meat.
