Ingredients

Instructions
1. Prepare the Pork Belly:
Pat the pork belly dry with paper towels. Combine the sea salt, salt, sugar, herbs, spices, sodium chloride, sodium nitrite, and celery salt in a small bowl. Rub the mixture thoroughly all over the pork belly, ensuring even coverage.
2. Marinate:
Place the seasoned pork belly in a shallow dish or a sealable plastic bag. Cover or seal and let marinate in the refrigerator for at least PT8H (8 hours) or overnight. This step allows the flavors to infuse deeply into the meat.
3. Initial Stove Cooking:
