Crispy Water Meringue Bites
Ingredients
- 3 large egg whites
- 1/2 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons water
- Pinch of salt
Instructions
1. Preparation:
- Preheat your oven to 225°F (107°C). Prepare two baking sheets by lining them with parchment paper.
2. Create Meringue:
- In a clean, dry bowl, beat the egg whites on medium speed with an electric mixer until they become frothy.
- Add the cream of tartar and a pinch of salt to stabilize the egg whites. Continue to beat until soft peaks form.
3. Dissolve Sugar:
- Gradually add the granulated sugar, 1 tablespoon at a time, while beating on high speed.
- Continue until the sugar is dissolved, and the mixture becomes glossy and forms stiff peaks. (This should take about 5 minutes.)
4. Incorporate Water and Vanilla:
- Gently fold in the vanilla extract and 2 tablespoons of water into the meringue mixture. Be careful to retain as much air as possible.
5. Pipe Meringue:
- Transfer the meringue mixture into a piping bag fitted with a round or star nozzle.
- Pipe small, bite-sized meringue kisses onto the prepared baking sheets, spacing them around 1 inch apart.
6. Baking:
- Place the baking sheets in the preheated oven.
- Bake for 1 hour with the oven door closed, then turn off the oven. Let the meringues cool completely inside the closed oven for at least 1 hour more, to ensure the meringues become completely dry and crispy.
7. Serve and Enjoy:
- Once cooled, carefully peel the meringue bites off the parchment paper. Serve immediately or store in an airtight container.
