Crispy Zucchini Herb-Parmesan Bakes with Pecan Lemon Crust



Ingredients



- 2 medium zucchini, sliced into 1/4-inch rounds
- 3 tablespoons olive oil
- 1/4 cup fresh herbs (such as parsley and thyme), finely chopped
- 1 cup Parmesan cheese, grated
- Salt and pepper to taste
- 1 cup panko bread crumbs
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon Aleppo pepper
- 1 teaspoon lemon zest
- 1/4 cup pecans, finely chopped
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice

Instructions



1. Preheat the Oven:
- Preheat your oven to 400°F (204°C).

2. Prepare the Zucchini:
- Slice the zucchini into 1/4-inch rounds and place them in a large mixing bowl.

3. Season the Zucchini:
- Drizzle the sliced zucchini with olive oil, and sprinkle with salt, pepper, and half of the fresh herbs. Toss until evenly coated.

4. Create the Herb-Parmesan Coating:
- In a separate mixing bowl, combine the panko bread crumbs, grated Parmesan cheese, crushed red pepper, Aleppo pepper, lemon zest, and the remaining fresh herbs. Mix thoroughly.

5. Prepare the Pecan Lemon Crust:
- Add the finely chopped pecans to the panko Parmesan mixture. Stir in the extra-virgin olive oil and lemon juice until the mixture holds together slightly.

6. Coat the Zucchini:
- Press each zucchini slice into the panko Parmesan mixture, ensuring a generous crust adheres to both sides. Place the coated slices on a baking sheet lined with parchment paper.

7. Bake the Zucchini:
- Bake in the preheated oven for 20-25 minutes, or until the zucchini slices are golden brown and crispy.
