Crock Pot Cheesy Chicken and Broccoli Delight
Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil

- 1 medium white onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

Instructions
1. Prepare the Ingredients:
- Chop the white onion and mince the garlic cloves.
- Cut the chicken breasts into bite-sized pieces and season them with salt and pepper.
- Wash the broccoli florets and set them aside.
2. Sauté the Aromatics:
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes
- Transfer the sautéed onion and garlic to the crock pot.
3. Brown the Chicken:
- In the same skillet, melt the butter. Add the chicken pieces and cook them until they are lightly browned on all sides, approximately 5-7 minutes. Do not cook thoroughly.
- Remove the chicken from the skillet and place it in the crock pot.
4. Create the Cheese Sauce:
- Utilizing the residual drippings in the skillet, sprinkle the flour and whisk continuously for about 1 minute to create a roux.
- Gradually whisk in the chicken broth and milk until the mixture is smooth and without lumps.
- Stir in the cheddar cheese, dried thyme, and dried oregano. Continue to stir until the cheese melts and the sauce thickens, around 3-4 minutes.
5. Assemble the Crock Pot:
- Pour the cheese sauce over the chicken and onion mixture in the crock pot.
- Add the broccoli florets on top. Stir gently to ensure the sauce coats all ingredients.
6. Slow Cook the Dish:
- Cover the crock pot and set it to low. Allow the dish to cook for approximately 4-5 hours until the chicken is tender and fully cooked, and the broccoli is soft but not mushy.
