- 1 pound chicken breasts, cubed
- 1 cup onions, diced
- 3 cloves garlic, minced
- 1 cup butternut squash, cubed
- 1 cup potatoes, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup white beans, drained and rinsed
- 1 cup black beans, drained and rinsed
- 1 cup lentils, rinsed
- 1 teaspoon turmeric
- 4 cups veggie broth
- 1 cup cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 lemon, juiced
- 1 cup tender greens
- 2 cups cooked pasta (optional, for serving)
- Salt and pepper, to taste

Instructions



1. Prepare the Crock Pot:
Arrange your Crock Pot on a stable countertop and set it to HIGH heat.

2. Prep the Veggies:
Wash and dice the onions, butternut squash, potatoes, broccoli, and cauliflower. Mince the garlic cloves.

3. Load the Crock Pot:
Place the cubed chicken breasts at the bottom of the Crock Pot. Layer the diced onions, minced garlic, cubed butternut squash, diced potatoes, broccoli florets, and cauliflower florets over the chicken.

4. Add the Legumes and Spices:
Add the rinsed white beans, black beans, and lentils over the vegetables. Sprinkle the turmeric evenly. Pour in the veggie broth.

5. Cook the Medley:
Cover the Crock Pot with its lid. Allow the mixture to cook on HIGH heat for 6 hours or until the chicken and vegetables are tender.

6. Incorporate the Cheese:
Once the cooking time is complete, stir in the shredded cheddar cheese and grated Parmesan cheese until melted into the broth.

Add the juiced lemon and tender greens. Stir and cover for an additional 5 minutes on LOW heat to allow the greens to wilt.
