Crock Pot Chipotle Chicken and Bean Soup with Avocado and Tortilla Strips
Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 medium sweet onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 2 cups chicken stock
- 1 cup tomato puree
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes and green chilies
- 1 cup yellow corn kernels
- 1 can (4 oz) diced green chiles
- 1 chipotle pepper in adobo sauce, minced
- 1 tsp chili powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 ½ tsp kosher salt
- 1 tsp freshly ground black pepper
- 2 tbsp freshly squeezed lime juice
- ¼ cup freshly chopped cilantro leaves
- Tortilla strips, for garnish
- 1 avocado, diced
- Sour cream, for serving
- Additional cilantro, for garnish
Instructions
1. Prepare the Crock Pot: Set your Crock Pot to the low setting.
2. Layer Ingredients: Place the chicken thighs at the bottom of the Crock Pot. Sprinkle with chili powder, oregano, salt, and pepper.
3. Add Vegetables and Beans: Top the chicken with diced onion, red bell pepper, garlic, corn, black beans, and diced tomatoes with green chilies.
4. Add Liquids and Spices: Pour in the chicken stock and tomato puree. Add the diced green chiles, minced chipotle pepper, and ground cumin. Stir slightly to combine.
5. Slow Cook: Cover and cook on low for 6 to 8 hours until the chicken is tender and easily pulled apart. Alternatively, cook on high for 3 to 4 hours if time is limited.
6. Shred Chicken: Remove the chicken thighs from the Crock Pot. Discard the skin and bones, then shred the meat using two forks.
7. Final Touches: Return the shredded chicken to the Crock Pot. Stir in the lime juice and chopped cilantro leaves. Taste and adjust seasoning if necessary.
8. Serve: Ladle the soup into bowls and top with diced avocado, tortilla strips, a dollop of sour cream, and a sprinkle of cilantro.
