Crock Pot Creamy Beef and Mushroom Stroganoff



Ingredients



- 2 pounds beef stew meat
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 ounces baby bella mushrooms, sliced
- 2 cups beef broth
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 2 tablespoons EZ Gel by Cornaby's or cornstarch
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 12 ounces egg noodles
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped (for garnish)

Instructions



1. Prepare the Beef:
Place the beef stew meat in a large mixing bowl. Sprinkle with Italian seasoning, garlic powder, kosher salt, and black pepper. Toss to coat the beef thoroughly with the spices.

2. Layer Ingredients in Crock Pot:
Place the seasoned beef into the crock pot. Add sliced baby bella mushrooms and pour in the beef broth. Stir in Dijon mustard and Worcestershire sauce, ensuring everything is well combined.

3. Cook:
Cover the crock pot with its lid. Set to low heat and cook for PT7H (7 hours) or high heat for PT4H30M (4 hours and 30 minutes) until the beef is tender and flavors have melded beautifully.

4. Thicken the Sauce:
About 30 minutes before the end of the cooking time, dissolve the EZ Gel or cornstarch in a small amount of cold water to create a slurry. Stir the slurry into the crock pot sauce and continue to cook for the remaining time, allowing the sauce to thicken.

5. Add Cream Mixture:
Once the cooking time is complete, add the cream cheese and sour cream to the crock pot. Stir until the cream cheese is fully melted and the mixture is smooth.

6. Cook Egg Noodles:
While the cream is integrating, cook the egg noodles according to the package instructions, usually PT8M (8 minutes) for al dente. Drain and set aside.

7. Combine:
Just before serving, add the cooked egg noodles to the crock pot. Gently mix everything together to coat the noodles evenly with creamy sauce.

8. Garnish and Serve:
Dish up the creamy beef and mushroom stroganoff. Garnish with freshly chopped thyme and parsley before serving.
