Crock Pot Creamy Chickpea Tahini Dip



Ingredients



- 2 cups dried chickpeas
- 1 cup tahini
- 1/4 cup fresh lemon juice
- 2 cups water
- 1 teaspoon salt
- 3 cloves garlic, minced
- 1/4 teaspoon organic citric acid

Instructions



1. Prepare Chickpeas:
- Rinse dried chickpeas under cold water to remove any debris.

2. Soak Chickpeas:
- Place chickpeas in a large bowl and cover with water. Ensure they are fully submerged.
- Allow them to soak overnight (PT10H: 10 hours).

3. Drain and Rinse:
- After soaking, drain the chickpeas and rinse them well.

4. Combine Ingredients in Crock Pot:
- Transfer the soaked chickpeas to the Crock Pot.
- Add 2 cups of water, minced garlic, and salt.

5. Cook:
- Set the Crock Pot to low heat.
- Cook the chickpeas for PT04H: 4 hours, or until tender.

6. Blend Chickpeas:
- Once cooked, drain the chickpeas, reserving a cup of the cooking liquid.
- In a food processor, add chickpeas, tahini, lemon juice, organic citric acid, and a portion of the reserved cooking liquid.
- Blend until smooth, adding more cooking liquid as needed to reach your desired consistency.

7. Season and Serve:
- Taste and adjust seasoning with additional salt or lemon juice if needed.
- Spoon the dip into a serving bowl, drizzle with a bit of tahini for garnish, and serve with pita bread or fresh vegetables.
