Crock Pot Dill Pickle Snack Chips
Ingredients
- 2 English cucumbers, thinly sliced
- 3 cloves garlic, peeled and slightly crushed
- 1 bunch fresh dill
- 2 cups white distilled vinegar
- 1 ½ cups granulated sugar
- 1 tbsp salt
- 1 cup bread and butter pickles
- 1 cinnamon stick
- 1 tbsp whole mustard seeds
- 1 tsp allspice berries
- ½ tsp whole cloves
- 1 tsp ground turmeric
- 1 tbsp honey
- 1 tbsp agave syrup
- 2 packets artificial sweeteners
Instructions
1. Prepare Cucumbers:
Thinly slice the 2 English cucumbers into uniform rounds and place them in a large bowl. Add the crushed garlic cloves and a handful of fresh dill to the bowl.
2. Create the Pickling Mix:
In the Crock Pot, combine 2 cups of white distilled vinegar with 1 ½ cups of granulated sugar and 1 tbsp of salt. Stir until the sugar and salt are fully dissolved.
3. Add Seasonings:
To the vinegar mixture, add 1 cinnamon stick, 1 tbsp of whole mustard seeds, 1 tsp of allspice berries, ½ tsp of whole cloves, and 1 tsp of ground turmeric. Stir to evenly distribute the spices.
4. Sweeten the Mixture:
Mix in 1 tbsp of honey, 1 tbsp of agave syrup, and 2 packets of artificial sweeteners. Stir well to ensure all sweeteners are fully dissolved.
5. Add Cucumbers to Crock Pot:
Gently place the cucumber slices and garlic into the Crock Pot with the prepared pickling mixture. Make sure the cucumbers are fully submerged in the liquid. Top with a fresh sprig of dill.
6. Cook:
Set the Crock Pot to the low setting and let it cook for approximately PT3H30M (3 hours and 30 minutes) until the cucumbers have absorbed the flavors and have slightly wilted.
7. Serve and Enjoy:
Carefully remove the cucumber slices from the Crock Pot and transfer them to a serving dish. Let them cool slightly before enjoying as a flavorful snack.
