Crock Pot Hawaiian BBQ Meatballs
Ingredients
- 32 frozen meatballs (about 2 pounds)
- 1 cup pineapple chunks, drained
- 1 cup BBQ sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 2 tablespoons brown sugar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 3 green onions, chopped (for garnish)
Instructions
1. Prepare the Sauce: In a large mixing bowl, combine the BBQ sauce, soy sauce, rice wine vinegar, brown sugar, grated ginger, and minced garlic. Mix well to combine all the flavors thoroughly.
2. Layer the Crock Pot: Place the frozen meatballs into the bottom of your Crock Pot. Pour the pineapple chunks evenly over the meatballs.
3. Combine Ingredients: Pour the prepared sauce over the meatballs and pineapple. Stir gently to ensure the sauce thoroughly coats the meatballs and pineapple chunks.
4. Cooking: Cover the Crock Pot with its lid. Set to low heat and cook for approximately PT4H (4 hours). During the last 30 minutes of cooking, occasionally stir the meatballs to ensure they remain well-coated in the sauce.
5. Finish and Serve: Once cooked, remove the lid and give the meatballs a final stir. Transfer to a serving dish and garnish with the chopped green onions. Enjoy these delightful meatballs over rice or as an appetizer.
