Crock Pot Honey Lime Sriracha Chicken Thighs
Ingredients
- 8 boneless, skinless chicken thighs
- 1/4 cup honey
- 2 limes, juiced
- 3 tablespoons Sriracha sauce
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups cooked white rice
Instructions
1. Prepare the Marinade:
- In a mixing bowl, combine the honey, lime juice, Sriracha sauce, olive oil, minced garlic, salt, and black pepper. Whisk the ingredients together until fully integrated.
2. Marinate the Chicken:
- Place the chicken thighs in a shallow dish. Pour the marinade over the chicken, ensuring each thigh is well-coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.
3. Prepare the Crock Pot:
- Set the Crock Pot to the low setting. This ensures the chicken becomes tender and absorbs the marinade flavors over time.
4. Cook the Chicken:
- Transfer the marinated chicken thighs and any remaining marinade into the Crock Pot. Arrange the thighs in a single layer if possible.
- Cover and cook on low for approximately 4 hours, or until the chicken is fully cooked and tender. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.
5. Serve:
- Once the chicken is cooked, serve over a bed of cooked white rice. Drizzle the remaining juices from the Crock Pot over the chicken and rice for added flavor.
