Crock Pot Lemon-Garlic Chicken Delight
Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 lemon, thinly sliced plus juice of 1 lemon
Instructions
1. Prepare the Marinade:
- In a bowl, mix olive oil, minced garlic, salt, black pepper, paprika, and the juice of one lemon. Stir until well combined.
2. Prepare the Chicken:
- Place chicken breasts into the bowl with the marinade. Ensure all chicken breasts are thoroughly coated, then cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
3. Layer the Ingredients in the Crock Pot:
- Place half of the lemon slices at the bottom of the crock pot. This will infuse the chicken with a citrusy aroma as it cooks.
- Arrange the marinated chicken breasts over the lemon slices. Pour any remaining marinade over the chicken.
- Lay the remaining lemon slices on top of the chicken breasts.
4. Cook the Chicken:
- Cover the crock pot with its lid and set it to cook on low for PT4H (4 hours). Check once halfway through cooking and gently baste the chicken with the juices from the bottom of the pot for enhanced flavor and moisture.
5. Finish and Serve:
- After cooking, the chicken should be tender and infused with a rich lemon-garlic essence. Remove from the crock pot and let it rest for a few minutes before serving.
- Serve hot, garnished with additional lemon slices if desired.
