Crock Pot Lime-Infused Beef Chuck Roast
Ingredients
- 2 tablespoons cooking oil
- 5 cloves garlic, minced
- 4 pounds beef chuck roast
- 1 tablespoon chili powder
- 2 cups lemon-lime soda
- 1/4 cup lime juice
- Salt and pepper to taste
Instructions
1. Prepare the Beef:
- Rinse and pat dry the beef chuck roast with paper towels. Season generously with salt and pepper on all sides.
2. Sear the Roast:
- In a large skillet, heat the cooking oil over medium-high heat. Once hot, add the beef roast and sear for about 4 minutes on each side until browned. Remove from the skillet and set aside.
3. Prepare the Crock Pot:
- Place the minced garlic and chili powder at the bottom of the crock pot. Lay the seared beef chuck roast on top of the garlic and chili powder.
4. Add the Liquids:
- Pour the lemon-lime soda and lime juice over the beef roast in the crock pot, ensuring a well-distributed pour to enhance flavor infusion.
5. Slow Cook:
- Cover the crock pot with the lid and set it to low heat. Allow the beef to cook for approximately 8 hours, or until it is tender and easily pulls apart with a fork.
6. Rest and Serve:
- Once done, carefully remove the roast from the crock pot and let it rest for about 10 minutes. Shred the beef using two forks and serve with the cooking juices spooned over the top for added flavor.
