Crock Pot Pork Roast with Savory Tomato-Bell Pepper Sauce
Ingredients
- 1 (3-pound) pork roast
- 4 cloves garlic, minced
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery ribs, sliced
- 2 red bell peppers, sliced
- 1 (15-ounce) can tomato sauce
- 1 (15-ounce) can diced tomatoes
- 1 pound fettuccini
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
1. Prepare the Ingredients:
- Season the pork roast generously with salt and pepper.
- Peel and mince the garlic cloves.
- Chop the onion, dice the carrots, and slice the celery ribs and red bell peppers.
2. Sear the Pork Roast:
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the pork roast for about 3-4 minutes on each side until a golden crust forms. This step enhances flavor and retains moisture.
3. Assemble in the Crock Pot:
- Place the pork roast in the bottom of the crock pot.
- Top with minced garlic, chopped onion, diced carrots, sliced celery, and red bell peppers.
- Pour the tomato sauce and diced tomatoes over the top.
4. Cook the Pork Roast:
- Cover the crock pot with the lid.
- Set it to low heat and cook for PT8H (approximately 8 hours) until the pork is tender and easily shreddable.
5. Prepare the Fettuccini:
- About 30 minutes before serving, cook the fettuccini according to package instructions, usually around PT10M (10 minutes). Drain and set aside.
6. Finish the Dish:
- Remove the pork from the crock pot and shred it with two forks.
- Return the shredded pork to the crock pot and stir to coat it with the sauce.
- Serve the pork and sauce over a bed of fettuccini.
- Garnish with freshly grated Parmesan cheese before serving.
