Crock Pot Split Pea & Ham Comfort Soup
Ingredients
- 1 pound dried split peas, rinsed and sorted
- 1 pound ham, diced
- 2 cups celery, diced
- 2 cups carrots, diced
- 1 large onion, chopped
- 6 cups chicken broth
- 1/4 cup fresh parsley, chopped
- 1 bay leaf
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1/2 cup heavy cream
- 1 cup milk
Instructions
1. Prepare the Ingredients
Rinse and sort the split peas, discarding any debris or stones. Dice the ham, celery, and carrots, and chop the onion. Peel and dice the potatoes and mince the garlic.
2. Build Your Flavor Base
In a crock pot, combine the split peas, diced ham, diced celery, carrots, chopped onion, and minced garlic. Stir in the chicken broth and add the bay leaf, black pepper, dried thyme, and salt.
3. Cook the Base Soup
Cover the crock pot with its lid and cook on low for PT6H30M (6 hours and 30 minutes) until the peas are tender and the flavors meld.
4. Incorporate Creaminess
Add the diced potatoes to the soup. Continue cooking on low for an additional PT1H (1 hour) until the potatoes are soft.
5. Finish with Dairy
Stir in the heavy cream and milk. Allow the soup to cook on low for another PT30M (30 minutes) until heated through. Remove the bay leaf before serving.
6. Garnish and Serve
Ladle the soup into serving bowls and garnish each with fresh parsley for a burst of color and fresh flavor.
