Decadent Banana Cream Cake with Vanilla Cheesecake Frosting
Ingredients
For the Cake:
- 3 large ripe bananas, mashed (about 1 1/2 cups)
- 1 (15.25 oz) box yellow cake mix
- 1 (3.4 oz) package instant banana pudding mix
- 4 large eggs
- 1/2 cup water
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup canola oil
For the Frosting:
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
Instructions
1. Preheat the Oven: Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
2. Prepare the Cake Batter:
- In a large mixing bowl, combine the mashed bananas and eggs. Whisk until smooth.
- Add the boxed yellow cake mix, instant banana pudding mix, water, sour cream, 1 teaspoon vanilla extract, and canola oil.
- Use an electric mixer on medium speed to blend the ingredients until the batter is smooth and well combined, about 2-3 minutes.
3. Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove from oven and allow the cakes to cool in the pans for 10 minutes.
- Carefully transfer the cakes to a wire rack to cool completely before frosting.
4. Prepare the Frosting:

- Spread a generous amount of frosting on top of the first layer.
- Carefully position the second cake layer on top and spread the remaining frosting over the top and sides of the cake.
6. Chill and Serve:
- Optionally, chill the cake in the refrigerator for at least 30 minutes to allow the frosting to set.
