Decadent Beef Wellington with Mushroom Duxelles
Ingredients
- 1.5 pounds beef tenderloin
- 1 cup mushrooms, finely chopped
- 4 slices prosciutto
- 1 sheet puff pastry, thawed
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon fresh thyme leaves
- 2 tablespoons sherry
- 2 tablespoons Dijon mustard
- 1 egg, beaten
Instructions
1. Prepare Mushroom Duxelles:
- In a skillet over medium heat, add the finely chopped mushrooms, shallot, and minced garlic. Cook for about 5 minutes until the moisture is released from the mushrooms and evaporates.
- Add the sherry and fresh thyme, then cook for an additional 3 minutes until the mixture is dry. Season with salt. Set aside to cool.
2. Prepare Beef Tenderloin:
- Pat the beef tenderloin dry with paper towels and season it with salt.
- Heat a large skillet over high heat. Sear the beef on all sides for about 2 minutes per side until it's browned. Remove from heat and allow it to rest.
3. Assemble the Wellington:
- Lay out the prosciutto slices on a piece of plastic wrap, overlapping them slightly to form a rectangle.
- Evenly spread the cooled mushroom duxelles over the prosciutto layer.
- Brush the beef tenderloin lightly with Dijon mustard, then place it on top of the mushroom layer.
- Carefully roll the prosciutto and mushroom layer over the beef using the plastic wrap to form a tight log. Seal the edges and chill for at least 15 minutes in the refrigerator.
4. Wrap in Puff Pastry:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheet on a floured surface. Remove the beef from the plastic wrap and place it on the pastry.
- Fold the pastry over the beef, trimming excess and sealing edges by pinching together. Place seam-side down on a baking sheet.
- Brush the entire surface with the beaten egg to create a golden crust.
5. Bake and Serve:
- Using a sharp knife, score the top of the pastry lightly in a decorative pattern.
- Bake in the preheated oven for about 25-30 minutes until the pastry is golden and crisp.
- Let the Beef Wellington rest for 10 minutes before slicing and serving.
