Decadent Brioche French Toast with Blackberry Compote
Ingredients
For the French Toast:
- 8 slices thick brioche bread
- 4 large eggs
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 2 tbsp white sugar
- 4 tbsp butter
For the Whipped Cream Cheese:
- 1 cup whipped cream cheese
- 2 tbsp powdered sugar
For the Blackberry Compote:
- 2 cups fresh blackberries
- 1/4 cup granulated white sugar
- 1 tbsp cornstarch
- 1/4 cup water
- 1 tbsp fresh lemon juice
For Serving:
- Maple syrup
- Powdered sugar for dusting
Instructions
Step 1: Prepare the Batter
1. In a large mixing bowl, whisk together the eggs, heavy whipping cream, vanilla extract, ground cinnamon, and white sugar until well combined.
Step 2: Make the Blackberry Compote
1. In a small saucepan, combine the blackberries, granulated sugar, cornstarch, water, and lemon juice.
2. Cook over medium heat, stirring frequently, until the sauce thickens and the berries start to break down, about 10 minutes.
3. Once thickened, remove from heat and set aside.
Step 3: Cook the French Toast
1. Preheat a large non-stick skillet or frying pan over medium heat and add 1 tablespoon of butter.
2. Dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds on each side.
3. Place the soaked bread into the hot pan, and cook until golden brown, approximately 3-4 minutes per side. Work in batches, adding more butter to the pan as needed.
Step 4: Prepare the Whipped Cream Cheese
1. In a small bowl, mix together the whipped cream cheese and powdered sugar until smooth and set aside.
Step 5: Assemble and Serve
1. Place two slices of cooked French toast on each plate. Top with a generous dollop of whipped cream cheese.
2. Spoon a portion of the blackberry compote over the top.
3. Drizzle with maple syrup to taste and finish with a light dusting of powdered sugar.
