Instructions
1. Prepare the Batter:
- In a large mixing bowl, combine 2 cups of King Arthur Buttermilk Pancake Mix, 1 cup of water, and 2 large eggs.
- Whisk until just combined, ensuring there are no large lumps.
- Gently fold in 1/2 cup of chocolate chips, taking care not to overmix.
2. Add Flavor Elements:
- Incorporate the zest of 1 citrus into the batter for a fragrant note.
- In a separate small bowl, toss the mixed berries and chopped fruit together. Set aside for later use.
3. Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat and melt 1 tablespoon of butter.
