Decadent Carrot and Pineapple Spice Cake with Cream Cheese Frosting



Ingredients


- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 3/4 cup vegetable oil

- 1/2 cup chopped walnuts
- 1/2 cup raisins

Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 3/4 cups powdered sugar
- 1 teaspoon vanilla extract

Instructions


1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix Dry Ingredients:
In a large bowl, whisk together flour, sugar, baking soda, cinnamon, and salt until evenly combined.

3. Combine Wet Ingredients:
In another bowl, beat the eggs. Add vegetable oil and vanilla extract, mixing well. Stir in the grated carrots, minced ginger, and diced pineapple until thoroughly mixed.

4. Combine Mixtures:
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped walnuts and raisins.

5. Bake the Cake:
