Decadent Carrot and Walnut Breakfast Scones with Cinnamon Glaze

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup cold butter, cubed
- 1/2 cup heavy cream
- 1 cup shredded carrots
- 1/2 cup walnuts, chopped
- 1/4 cup raisins
- 1 teaspoon vanilla extract
- 1 tablespoon powdered sugar
- 1/2 cup cinnamon glaze (store-bought or homemade)

Instructions



1. Preheat and Prepare Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour and 1/2 cup of granulated sugar. Mix thoroughly.

3. Add Butter
Add 1/2 cup of cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

4. Incorporate Wet Ingredients
Add 1 cup of shredded carrots, 1/2 cup of walnuts, 1/4 cup of raisins, 1 teaspoon of vanilla extract, and 1/2 cup of heavy cream to the dry mixture. Stir together until just combined. Be careful not to overmix.

5. Shape the Dough
Transfer the dough onto a lightly floured surface. Gently knead into a ball, then flatten into a 1-inch thick disk. Cut the disk into 8 equal wedges.

6. Bake the Scones

7. Glaze the Scones
