Decadent Chocolate Brioche Bread Pudding
Ingredients
- 3 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup granulated sugar
- 1 teaspoon kosher salt
- 1/2 cup whole milk, warmed
- 3 large eggs
- 1 egg yolk
- 1/2 cup unsalted butter, softened
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 6 ounces dark chocolate, chopped
- 1/4 cup water
- 2 tablespoons honey
Instructions
1. Prepare the Brioche:
- In a large bowl, combine 1 cup of the flour, active dry yeast, and granulated sugar.
- Add the warm milk and whisk until smooth. Allow the mixture to sit for about 5 minutes, or until it becomes frothy.
2. Mix the Dough:
- Add the eggs, egg yolk, and remaining flour and salt to the yeast mixture. Stir well until a sticky dough forms.
- Gradually add the softened butter, one tablespoon at a time, kneading after each addition until the dough is smooth and elastic, approximately 10 minutes.
3. First Rise:
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours, or until it has doubled in size.
4. Shape and Bake the Brioche:
- Preheat the oven to 350°F (175°C).
- Punch down the risen dough and divide it into small balls, placing them into a greased loaf pan.
- Cover and allow it to rise again until doubled, about 30 minutes.
- Bake for 25–30 minutes or until golden brown. Allow the brioche to cool completely.
5. Prepare the Chocolate Custard:
- In a saucepan, heat the heavy cream and vanilla extract over medium heat until barely simmering.
- Remove from heat and stir in the dark chocolate until smooth.
- In a medium bowl, whisk the water and honey together, then slowly add in the chocolate mixture, stirring constantly.
6. Assemble the Bread Pudding:
- Preheat the oven to 325°F (163°C).
- Cut the cooled brioche into cubes and arrange them in a buttered baking dish.
- Pour the chocolate custard over the brioche cubes, ensuring they are fully coated.
- Let it sit for 10 minutes to soak.
7. Bake the Pudding:
- Bake for 35-40 minutes, or until the pudding is set and the top is slightly crisp.
8. Serve:
- Allow the pudding to cool for a few minutes before serving. Serve warm and enjoy your decadent creation!
