Ingredients
- Cookies:
- 1 1/2 cups Enriched flour
- 1 cup Sugar
- 1/2 cup Cocoa powder
- 1/2 cup Palm and soybean oils (combined)
- 1/4 cup Corn syrup
- 1/4 cup High fructose corn syrup
- 1/2 tsp Salt
- 1 tsp Leavening agents (baking soda or baking powder)
- 1 tsp Soy lecithin
- 1 tsp Vanilla extract
- Cream Filling:
- 1 cup Milk ingredients (dry milk powder or condensed milk)
- 1/2 cup Powdered sugar
- 1/4 cup Palm and soybean oils (combined)
- 1 tsp Vanilla extract
- Chocolate Coating:
- 1 cup Chocolate (melted)
Instructions
1. Prepare the Cookie Dough:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine enriched flour, sugar, cocoa powder, salt, and leavening agents. Stir until evenly mixed.
- In a separate bowl, blend palm and soybean oils with corn syrup, high fructose corn syrup, soy lecithin, and vanilla extract. Mix until well combined.
- Gradually add the wet mixture to the dry ingredients, mixing thoroughly until a smooth dough forms.
2. Shape and Bake the Cookies:
- Roll the dough into small balls, approximately 1 inch in diameter. Flatten them slightly with the palm of your hand for even baking.
- Place them on a baking sheet lined with parchment paper, ensuring enough space between each cookie.
- Bake for 10-12 minutes until the edges are set. Remove from the oven and let cool completely on a wire rack.
3. Prepare the Cream Filling:
- In a medium bowl, combine milk ingredients, powdered sugar, palm, and soybean oils, and vanilla extract.
- Mix with an electric mixer until smooth and creamy.
4. Assemble the Cookie Sandwiches:
- Once cookies are completely cooled, spread a generous layer of cream filling on the flat side of one cookie.
- Top with another cookie, flat side down, to create a sandwich. Repeat with remaining cookies.
5. Coat with Chocolate:
- Melt the chocolate in a microwave-safe bowl in 30-second intervals or using a double boiler until smooth.
- Dip each sandwich halfway into the melted chocolate, allowing excess to drip off.
- Place on parchment paper and allow the chocolate to set before serving.
