Ingredients



Main Cake Layer:
- 1 cup almond flour
- 2 eggs

Walnut Crumble:

Mascarpone Cream Layer:
- 8 ounces mascarpone cheese
- 1/4 cup condensed milk
- 1/2 teaspoon vanilla extract

Fruit Layer:
- 1/2 cup raspberries
- 1/2 cup berries (your choice)
- 1/2 cup apricots, sliced
- 1/4 cup peach slices

Toppings:
- 1/2 cup whipped cream
- 2 tablespoons apricot jam, warmed
- 1/4 cup Nutella
- 1/4 cup white chocolate shavings

Instructions



1. Prepare the Oven:
- Preheat your oven to 350°F (175°C).

2. Make the Cake Layer:
- In a mixing bowl, whisk together 1 cup almond flour, 2 eggs, and 1/2 cup sugar until smooth.
- Add in 1/4 cup melted dark chocolate, 1/4 cup melted white chocolate, and 1 teaspoon vanilla extract. Mix until well combined.
- Fold in 1/4 cup cranberries.
- Pour the mixture into a greased 9-inch round cake pan and spread evenly.

3. Bake the Cake:
- Bake in the preheated oven for 15 minutes or until a toothpick inserted in the center comes out clean. Let cool on a rack.

4. Prepare the Walnut Crumble:
- In a small bowl, mix 1/2 cup chopped walnuts, 2 tablespoons sugar, and 1 tablespoon melted butter.
- Spread the mixture on a baking sheet lined with parchment paper.
- Bake at 350°F (175°C) for 10 minutes until golden. Allow to cool.

5. Make the Mascarpone Cream:
- In a separate bowl, blend 8 ounces mascarpone cheese with 1/4 cup condensed milk and 1/2 teaspoon vanilla extract until creamy.

6. Assemble the Dessert:
- Spread the mascarpone cream evenly over the cooled cake.
- Arrange the raspberries, your choice of berries, sliced apricots, and peach slices atop the cream layer.
- Drizzle warmed apricot jam over the fruit.
- Sprinkle the walnut crumble on top.
- Drizzle Nutella decoratively and top with white chocolate shavings.

7. Add Finishing Touches:
- Pipe or spoon 1/2 cup whipped cream along the edges of the completed dessert for added visual appeal.
