Decadent Chocolate-Dipped Coconut Almond Macaroons
Ingredients
- Nonstick cooking spray
- 4 large eggs, separated (use only the whites)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 2 cups unsweetened shredded coconut
- 1/4 teaspoon kosher salt
- 1/2 cup powdered sugar
- 1/2 cup melted chocolate
Instructions
1. Preheat the oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly coat with nonstick cooking spray.
2. Prepare the meringue:
In a clean, dry mixing bowl, add the 4 egg whites and a pinch of kosher salt. Using an electric mixer, beat on medium-high speed until soft peaks form.
3. Add sugar and flavoring:
Gradually add 1 cup of granulated sugar and 1 teaspoon of vanilla extract to the egg whites, continuing to beat until the mixture forms stiff, glossy peaks.
4. Incorporate dry ingredients:
Gently fold in 2 cups of almond flour and 2 cups of unsweetened shredded coconut using a rubber spatula. Ensure even distribution without deflating the mixture.
5. Shape and bake macaroons:
Using a tablespoon or a small cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 1 inch apart. Bake in the preheated oven for 15 to 18 minutes, or until the macaroons are golden brown.
6. Cool and coat with powdered sugar:
Allow the macaroons to cool on the baking sheet for about 5 minutes. Transfer them to a wire rack to cool completely. Lightly dust with 1/2 cup of powdered sugar.
7. Dip in chocolate:
Once cool, dip the bottom of each macaroon into the melted chocolate, allowing excess to drip off. Place the macaroon back onto the parchment-lined baking sheet, chocolate side down.
8. Set chocolate:
Place the baking sheet in the refrigerator for about 10 minutes to allow the chocolate to set.
