Decadent Chocolate Espresso Cake
Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup brewed coffee, cooled
- 1 cup whole milk
- 1/2 cup buttermilk
- 1 tablespoon espresso powder
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. Prepare Dry Ingredients
In a large mixing bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
3. Mix Wet Ingredients
In another bowl, whisk together the eggs, melted butter, vanilla extract, coffee, milk, and buttermilk until well combined.
4. Combine Ingredients
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix to keep the batter light and airy.
5. Add Espresso & Sugar
Dissolve the espresso powder in a small amount of warm coffee and mix it into the batter along with the sugar. Stir until the sugar is fully incorporated.
6. Pour Batter into Pans
Evenly divide the batter between the prepared cake pans. Smooth the tops using a spatula.
7. Bake
Place the pans in the preheated oven and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
8. Cool
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.
9. Assemble and Serve
Once cooled, frost with your favorite frosting or enjoy as is. Slice and serve to appreciate the rich chocolate and espresso flavors.
