Decadent Chocolate Espresso Tiramisu with Pomegranate Glaze
Ingredients
For the Tiramisu Base:
- 1 1/2 cups Mascarpone cheese
- 1/2 cup heavy Cream
- 1/3 cup Honey
- 1/3 cup cooled Espresso
- 1 Banana, sliced
- 1 cup semi-sweet Chocolate, melted
- 16 Ladyfingers
For the Pomegranate Glaze:
- 1 1/2 cups Pomegranate juice
- 1/4 cup Tequila
- 2 tablespoons Lime juice
- 1 tablespoon Honey
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Prepare the Chocolate Espresso Mixture
In a double boiler, melt the semi-sweet chocolate until smooth. Remove from heat and let it cool slightly. In a medium bowl, mix the mascarpone cheese, heavy cream, and 1/3 cup honey until smooth. Stir in the cooled espresso gradually.
3. Layer the Tiramisu
Dip each ladyfinger into the mixture lightly, ensuring they aren’t soggy. Arrange a layer of ladyfingers in an 8x8 inch baking dish. Spread half of the mascarpone mixture over the ladyfingers. Add sliced bananas over the mascarpone. Add a second layer of ladyfingers and cover with the remaining mascarpone mixture. Drizzle melted chocolate over the top layer.
4. Bake the Tiramisu
Place the tiramisu dish in the preheated oven and bake for 10 minutes, just until the edges start to firm slightly. Remove from oven and let it cool completely before refrigerating for at least 2 hours for the flavors to meld.
5. Make the Pomegranate Glaze
In a saucepan, combine pomegranate juice, tequila, lime juice, and 1 tablespoon honey. Bring to a boil over medium heat, then reduce to a simmer, stirring occasionally. Allow the mixture to reduce by half and thicken. Remove from heat and let it cool.
6. Serve the Tiramisu
Slice the tiramisu and serve chilled, drizzling with pomegranate glaze before serving. Enjoy your luxurious dessert!
