Decadent Chocolate Lava Cake
Ingredients
- 1/2 cup unsalted butter (plus extra for greasing)
- 1 cup semi-sweet chocolate chips
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- Powdered sugar for dusting (optional)
Instructions
1. Preheat the Oven: Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with unsalted butter and lightly dust with flour, tapping out the excess. Place the ramekins on a baking sheet.
2. Melt the Chocolate and Butter: In a microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave on high for about 1-2 minutes, stirring every 30 seconds, until fully melted and smooth.
3. Prepare the Batter: In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, vanilla extract, and salt until the mixture is pale and thick. Carefully fold the melted chocolate mixture into the egg mixture until well combined. Gently sift the flour over the top and fold in until just combined.
4. Fill the Ramekins: Divide the chocolate batter evenly among the prepared ramekins, filling each about 3/4 full.
5. Bake the Cakes: Place the baking sheet with ramekins in the preheated oven. Bake for 12-14 minutes, or until the edges are firm but the centers remain soft.
6. Serve: After removing from the oven, let the cakes rest for 1 minute. Carefully invert each ramekin onto a plate. Dust with powdered sugar if desired, and serve immediately for a deliciously gooey center.
