Decadent Chocolate Lava Cake
Ingredients
- 6 oz semi-sweet chocolate chips
- 1/2 cup (1 stick) unsalted butter
- 1/4 cup all-purpose flour
- 1 1/2 cups powdered sugar
- 3 large eggs
- 3 large egg yolks
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: Ice cream or whipped cream for serving
Instructions
1. Preheat the oven to 425°F (218°C). Grease four 6-ounce ramekins with butter and lightly dust with flour. Tap out any excess flour.
2. Melt the chocolate and butter: In a medium-sized microwave-safe bowl, combine the semi-sweet chocolate chips and unsalted butter. Microwave in 30-second intervals, stirring thoroughly between each, until the butter and chocolate are completely melted and smooth. Set aside to cool slightly.
3. Mix dry ingredients: In a small bowl, mix together the all-purpose flour, powdered sugar, and salt until well combined.
4. Whisk eggs: In a large bowl, whisk together the eggs, egg yolks, and vanilla extract until combined, about 1-2 minutes.
5. Combine wet and dry: Gradually add the flour mixture to the egg mixture, stirring gently until just blended.
6. Incorporate the chocolate: Slowly pour the melted chocolate mixture into the batter, stirring until smooth and uniform. Be sure not to overmix.
7. Fill the ramekins: Evenly divide the batter among the prepared ramekins, filling each about 3/4 full. Place them on a baking sheet for easy handling.
8. Bake: Transfer the baking sheet to the preheated oven. Bake for 12-14 minutes, or until the edges are firm but the center is still soft and has a slight jiggle.
9. Cool and serve: Let the cakes cool for 1 minute. Carefully invert each cake onto a small plate. Serve immediately, optionally topped with a scoop of ice cream or dollop of whipped cream.
