Decadent Chocolate Meringue Nests with Whipped Cream and Mini Eggs
Ingredients
- 4 large egg whites
- 1 cup caster sugar

Instructions
1. Preheat the Oven
Preheat your oven to 275°F (135°C). Line two baking sheets with parchment paper.
2. Prepare the Meringue Base
In a large mixing bowl, place the egg whites and salt. Use an electric mixer to beat the egg whites until soft peaks form, about PT3M (3 minutes). Gradually add the caster sugar, one tablespoon at a time, continuing to beat until the mixture is glossy and dense, and stiff peaks form, about PT5M (5 minutes).
3. Flavor the Meringue
Gently fold in the vanilla extract and vinegar. Continue folding until the flavorings are well incorporated.
4. Incorporate Chocolate
Gently fold the finely chopped semisweet chocolate into the meringue mixture, ensuring even distribution without deflating the peaks.
5. Shape the Meringue Nests
Use a large spoon to dollop the meringue mixture onto the prepared baking sheets, forming 8-10 small nests. Flatten each with the back of the spoon, creating a slight hollow in the center for the filling.
6. Bake the Meringue
Place the meringue nests in the preheated oven and bake for PT1H (1 hour). The meringues should be dry and crisp to the touch. Once done, turn off the oven, leave the door slightly ajar, and allow the meringues to cool completely in the oven for PT30M (30 minutes).
7. Prepare the Whipped Cream
In a chilled mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium speed until soft peaks form, about PT3M (3 minutes).
8. Assemble the Dessert
Once the meringue nests are completely cool, spoon a generous dollop of whipped cream into the center of each. Nestle several mini chocolate eggs into the whipped cream until each nest is beautifully filled.
9. Serve and Enjoy
Arrange the meringue nests on a decorative serving platter and serve immediately for a delightful and visually appealing dessert.
