Decadent Chocolate Peanut Butter Chip Oat Bars
Ingredients
- 1 cup (2 sticks) unsalted butter
- 1 cup semi-sweet chocolate chips
- 4 oz unsweetened chocolate, chopped
- 4 large eggs
- 1 3/4 cups granulated sugar
- 1 tablespoon vanilla extract
- 1 tablespoon instant espresso powder
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup peanut butter chips
- 1 cup mixed nuts, chopped
- 1 1/2 cups rolled oats
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by lining it with parchment paper, leaving overhang on the sides for easy removal later.
2. Melt Butter and Chocolates:
In a medium saucepan over low heat, melt together the unsalted butter, semi-sweet chocolate chips, and the chopped unsweetened chocolate, stirring continuously until smooth. Remove from heat and set aside to cool slightly.
3. Mix Wet Ingredients:
In a large mixing bowl, beat the eggs and granulated sugar together until thick and light in color. This should take about 3-4 minutes. Stir in the vanilla extract and instant espresso powder until well incorporated.
4. Combine Wet and Chocolate Mixtures:
Gradually add the melted chocolate mixture to the beaten egg mixture, stirring until evenly combined.
5. Prepare Dry Ingredients:
In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, ensuring no clumps remain.
6. Add Stir-Ins:
Gently fold in the peanut butter chips, mixed nuts, and rolled oats until they are evenly distributed throughout the batter.
7. Bake:
Pour the batter into the prepared 9x13-inch pan, spreading it evenly with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs clinging.
8. Cool and Serve:
Allow the oat bars to cool in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into bars and serve.
