Decadent Cinnamon Coconut French Toast Bake



Ingredients



- 8 slices of bread, preferably slightly stale
- 4 large eggs
- 1 cup whipping cream
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup fresh strawberries, sliced
- 1/4 cup syrup (maple or your choice)
- 1/4 cup powdered sugar, for dusting

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Bread:
Cut the bread slices into cubes and set aside in a large mixing bowl.

3. Make the Custard Mixture:
In a separate bowl, whisk together the eggs, whipping cream, cinnamon, and vanilla extract until well combined.

4. Combine Bread and Custard:
Pour the custard mixture over the cubed bread. Toss gently to ensure all the bread is soaked with the custard. Let it sit for about 10 minutes to allow the bread to absorb the mixture.

5. Layer with Coconut:
Grease a baking dish (about 9x13 inches) with a bit of butter or non-stick spray. Place a third of the bread mixture in the dish. Sprinkle half of the sweetened shredded coconut evenly over the bread. Repeat with another layer of bread and coconut, finishing with a layer of bread.

6. Bake the French Toast:
Cover the baking dish with aluminum foil. Place in the preheated oven and bake for 30 minutes. Then, remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and crispy.

7. Prepare the Strawberries:
While the french toast bakes, slice the strawberries and set aside.

8. Serve:
Once the french toast is out of the oven, let it cool for about 5 minutes. Drizzle with syrup, scatter the fresh strawberries over the top, and dust generously with powdered sugar.

9. Plate and Enjoy:
Cut into servings and plate individually. Serve warm.
