Decadent Cinnamon Coffee Cake with Berries and Nut Crumble

Ingredients

- 1 package Bob's Red Mill Cinnamon Swirl Coffee Cake mix
- 1 cup whole milk
- 5 tablespoons melted butter
- 2 large eggs
- 1 cup powdered sugar
- 1/2 cup crème fraîche
- 1/4 cup vanilla yogurt
- 1 cup fresh berries (e.g., blueberries, raspberries, or sliced strawberries)
- 1/4 cup chopped pecans
- 1/4 cup sliced almonds

Instructions

1. Prepare the Oven and Pan
Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

2. Mix Cake Batter
In a large bowl, combine the Bob's Red Mill Cinnamon Swirl Coffee Cake mix with 1 cup of whole milk. Add in 3 tablespoons of melted butter and 2 large eggs. Stir until all ingredients are thoroughly combined. The batter should be smooth with no lumps.

3. Layer the Batter and Cinnamon Mix
Spread half of the cake batter evenly into the prepared baking dish. Sprinkle the cinnamon swirl packet (included in the cake mix) over the batter. Top with the remaining batter, spreading it evenly to cover the cinnamon layer.

4. Nut Crumble Topping
In a small bowl, mix the chopped pecans, sliced almonds, and the remaining 2 tablespoons of melted butter. Sprinkle this nut mixture evenly over the top layer of cake batter.

5. Bake the Cake
Place the dish in the oven and bake for about 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. The top should be golden brown with a crispy nut layer.

6. Prepare the Glaze and Toppings
In a medium bowl, whisk together 1 cup powdered sugar and 1/2 cup crème fraîche until smooth. Fold in 1/4 cup vanilla yogurt to the mixture. Set aside.

7. Final Assembly
Once the cake is baked, allow it to cool in the pan on a wire rack for about 10 minutes. Drizzle the powdered sugar and crème fraîche glaze over the warm cake. Scatter fresh berries on top for a pop of color and an acidic balance.

8. Serve
Slice and serve warm, letting the glaze soak slightly into the cake. Enjoy this indulgent breakfast treat with a side of coffee.
