Decadent Cookie Gelato Tart with Caramelized Toffee Crunch



Ingredients



  • 2 cups cookie crumbs (use your favorite cookies, finely crushed)

  • 1/2 cup unsalted butter, melted

  • 1 pint gelato (any flavor of your choice)

  • 1/2 cup toffee bits

  • 1/4 cup brown sugar

  • 1 tablespoon heavy cream

  • 1 teaspoon vanilla extract

  • Pinch of salt



Instructions



  1. Preheat your oven to 350°F.

  2. In a medium-sized mixing bowl, combine the 2 cups of cookie crumbs with 1/2 cup melted unsalted butter. Mix until well blended and the mixture resembles wet sand.

  3. Press the cookie mixture evenly into the base of a 9-inch tart pan, ensuring the crust is firm and packed tightly. Use the back of a spoon or a flat-bottomed glass to level the surface.

  4. Bake the crust in the preheated oven at 350°F for about 10 minutes or until golden brown. Remove from the oven and let it cool completely on a wire rack.

  5. While the crust cools, soften the gelato by placing it at room temperature for about 5 minutes. Stir gently for even consistency.

  6. Once the crust is entirely cool, evenly spread the pint of softened gelato over the crust using a spatula. Place the tart in the freezer to set for at least 2 hours.

  7. To create the caramelized toffee topping, combine 1/2 cup toffee bits, 1/4 cup brown sugar, 1 tablespoon heavy cream, and a pinch of salt in a small saucepan over medium heat. Stir continuously until the sugar has dissolved and the mixture thickens slightly, approximately 3-5 minutes.

  8. Remove from heat and stir in 1 teaspoon vanilla extract. Allow the toffee mixture to cool slightly.

  9. Once the tart is set, pour the cooled caramelized toffee mixture over the top of the gelato. Spread evenly using a spatula, working quickly before the topping hardens.

  10. Return the tart to the freezer for an additional 30 minutes before serving for best results.

  11. To serve, slice with a warm, dry knife for clean cuts.
